Sweet Life Grilled Salmon Poached in Beer

You can plan on serving 6 to 8 people with a 2 pound Salmon filet...and have some salmon left for a wonderful salad the next day!

Salmon Ingredients
Go to your local fish monger and get a piece of salmon that you know will be enough for your and your family.
Or, go to your local river and catch a salmon and get a filet off of it for this recipe...this will make it taste even better!
Rub Ingredients
Symphony of Seasonings Grilling Rub…available at www.sweetlifesaucecompany.com. It’s a no salt rub that enhances the flavors of this recipe!
Or…you could use one of the salt laden rubs you can find at your local grocery.
Or...you could throw together whatever spices you would like.
Sauce Ingredients
Sweet Life BBQ BBQ Sauce...available at www.sweetlifesaucecompany.com
Directions
Rip a big piece of foil off and form it up so you create a foil boat of sorts...it needs to be long enough and wide enough to allow the Salmon Filet to have about an inch or two of clearance around the edges as you roll the edges up. You only need about 1/2 inch to 3/4 inch high "rails" on your foil boat so you can hold the poaching fluid...either beer, water, or your favorite white wine.
Place your Salmonfilet into the foil boat and place onto a preheated grill set to medium heat. You can place this on the main grill deck. Pour a bottle of beer or your favorite white wine over the top of the Salmon Filet so that you just begin to cover the edges of your Salmon with the beer or white wine.
Liberally sprinkle Symphony of Seasonings Grilling Rub on the Salmon Filet.
Let er' cook on the grill!
You should be ready to baste the poached Salmon Filet with Sweet Life BBQ Sauce about 20 minutes in. Pour the sauce on and spread it around the Salmon filet with a basting brush. Continue the medium heat and let the BBQ Sauce caramelize on the Salmon. Pull the Salmon Filet off the heat at about 30 minutes and let it rest on the countertop in your kitchen for about 5 minutes.
